Ham and Egg Cups with Tater Tots and Sautéed Mushrooms

I was working on coming up with a menu for our twins 3rd birthday brunch. My husband came up with this dish and we were just feeding off of each other developing the recipe. (My contribution was the tater tots. Good one!) We do this a lot. Weird?… maybe… but we like it… it’s fun! you should try it sometime.

Also on the menu, shrimp and grits casserole, fruit skewers with watermelon stars on top, billionaires bacon, (If you haven’t heard of this, seriously look it up!) strawberry cheesecake bites, and smoked salmon with bagels (my father-in-law does an amazing smoked salmon.) I’m looking forward to it! A lot of cooking but a lot of fun!

We did a run through on the ham and egg cups because, well, we tasted it only in our heads. Many a project comes out great like that but for a party, it’s good to try it first. And it was amazing! We were both pretty impressed with ourselves. It’s 10:30 at night and the kids are sleeping,(because that’s the only time we get anything done around here) and we made this amazing breakfast/brunch dish. It was pretty easy. I highly recommend it.

12 Ham slices

24 Smashed tater tots

12 medium sized mushrooms, diced

1 Tbsp olive oil

1 Tbsp butter

12 tablespoons mozzarella cheese

12 large eggs

Green onions to garnish

4 to 5 pieces of bacon, crumbled for garnish

Salt

Pepper

 

Bake 4 to 5 pieces of bacon in the oven at 400 degrees for about 15 minutes until crispy. Crumble when cool and set aside.

 

Sautee Mushrooms in butter and olive oil. Season mushrooms with salt and pepper. When thoroughly cooked, set aside.

 

Bake tater tots until golden brown according to the package. After baking and slightly cooling, smash tater tots with a spatula.

 

Place ham in each muffin cup so it conforms to the cup. Make sure the ham completely covers the walls of the muffin tin. It’s ok if it’s not all in one piece.

Place the Tater tots in the bottom of the ham cups.

Then put the cheese on top next.

Press these layers down with the back of a spoon to get ready for the egg. Crack an egg on top of the layers.

Sprinkle salt and pepper on top.

 

Bake 400 degrees for 10 to 12 minutes depending on your oven. I love a runny yolk. If you’d rather yours a little more firm, leave it in another 1 to 2 minutes.

 

After they come out of the oven sprinkle chopped green onion on top and crumbled bacon.

 

These are really amazing ! My husband thought of this for our twins third birthday party brunch which is really more of a party of us because as I said in another post, “Yay, we made it to 3!”
