Here is another take on the Cream Soda cake that I did a couple of months ago. I needed to make some cupcakes for a Memorial Day picnic. I figured I would just do the cream soda cake in cupcake form because I had a lot of cooking to do for the picnic and this was definitely taking the easy way out. If you haven’t heard of these soda cakes, you are definitely missing out. You take a box of cake mix and a 12 ounce can of soda (or beer or champagne if as I’ve done before) and you mix them together. That’s it! But as easy as it is, this is also some of the moistest most delicious cake I have ever eaten. Now I can say it is amazing in cake form and also in cupcake form. I may never make a cake or cupcake by the directions on the box again. I am totally sold on these soda cakes.
I decided to do the cupcakes in red, white, and blue to celebrate and honor Memorial Day. I also bought little flags for each of the kids. We have red, white, and blue covered today.
You could do these in any color combination. This is really fun for Memorial Day or the 4th of July but you could make your child’s favorite colors for their birthday, colors for spring, Easter, Fall, etc.
This only made 16 cupcakes. This may be plus or minus one for you depending on how much batter you put in each cupcake liner.
Ingredients for the cake:
White Cake Mix
Creme Soda (I used Boylan’s)
red food coloring
blue food coloring
cupcake pan, like this one: Wilton Recipe Right Nonstick 12-Cup Regular Muffin Pan
I like the gel food coloring because you don’t have to add a lot of liquid (food coloring) to the batter making it too runny. I used gel for the blue and liquid for the red and it all worked out ok. Add color until you think it’s the right color for the liquid. The gel, you just take some on a toothpick and mix it in the batter. That’s usually enough, especially for a third of the batter.
Ingredients for the Icing:
8oz cream cheese
1 stick butter
1/2 box powdered sugar
1 tsp vanilla
Directions for the Cake:
Put the cake mix into a large bowl. Use a whisk to break up any lumps. Add the Cream Soda to the cake mix and whisk together. Separate cake mix into three separate bowls. I used a ladle to “measure” out the cake mix into the three bowls. It doesn’t have to be exact. Leave one bowl white, add blue food coloring to one and add red food coloring to the last.
Spoon the blue into the bottom of the cupcake liner of each liner.
Next, put the white.
Next, put the red layer on the top.
Now they are ready for the oven. I had one other pan with 4 cupcakes in it. I put that one in my other oven. But these are pretty quick if you needed to put the other pan in afterward. It took about 18 minutes. Check it with a toothpick. When it comes out clean, it’s ready to come out of the oven.
Directions for the icing:
While the cupcakes are in the oven, make your icing. Your butter and cream cheese should be room temperature or close. Put them in a bowl and mix it with an electric mixer on high speed. Add a half a box of powdered sugar a little at a time and blend with mixer on low speed. They mix at high speed for a minute and add the vanilla. Continue to mix until well combined.
Once the cupcakes have cooled, you can ice them. Get your professional sprinklers ready to decorate, i.e., your kids. Mine loved it!
